BARBATI YARD LONG BEANS CURRY

Yard long  beans  / chinese  long  beans  very  good  for health  , but  most  of  the  people  don't  know  the recipes  with  this  vegetable , including  me  some  time  before , once  my hubi  got  this  from  market  and told  to  learn  and  do  this  as  you  are  a blogger  you  should  learn . As  I am having  friend's  of  different states  in  my neighbour hood  I  went  and  asked  her,   she  gave  me  some  recipes  who is  a  Bengali.



I  made  this  recipe  from  her  mom - inlaws book  ; ) , they  use  mustard oil , I got  afraid as  we don't  use , so I used ghee. 

Ingredients -  

  • Yard  long beans - 1 bunch 
  • Potatoes - 2 
  • Garlic Ginger  paste - 1/2 tsp
  • Salt - as per 
  • Chilli powder - 1 tsp
  • Turmeric - 1/4 tsp
  • Cilantro springs - 1 / 2 cup
  • Curry leaves  - 1 string 
  • Ghee - 2 tsp
  • Oil - 1 tsp
  • Coriander seeds - 3 tsp
  • Poppy seeds - 2 tsp
  • Cloves - 5 
  • Cardamom - 2 
  • Cinnamon - 1 inch  
Method  of  preparation - 

Firstly  take  a  pan  add  coriander seeds , poppy seeds , cloves , cardamom , cinnamon and  when cool  add  in  a grinder and made  into  a fine  powder - this  is  main  source  for  most  of  curries  for bengali's  it seems . I did it  and it  worked yummy  dish .

Now  powder  is  ready  . so  now  we  go preparation  of  curry 
  • Wash   the  yard  beans under  water  and  remove the  ends  and  chop  them  for  inch  in size 
  • Peel  the  potatoes and  wash  and  chop  potatoes in small cubes 
  • Peel  and  chop  onions 
  • Peel garlic pods - 4 and  ginger - 1 inch and  ground  into  fine  paste in  a  mortal {fresh}
  • Take  a  pan  add ghee  and  oil  when  hot  add   curry  leaves  , when  it  cracks add chopped  onions and  fry for  a  sec 
  • Add  grounded  garlic  ginger  paste and  on medium and  low  flame  fry  to 5 mint's add chopped potatoes and  fry till more 5 - 8 mint's  
  • Close  the  lid  and  fry them  in  the  middle by  removing  the  lid 
  • Add   prepared  masala powder  , turmeric powder , red  chilli powder and  saute  well on  a low flame ,
  • After  4 mint's  add  chopped  yard  beans and  mix  well for more 5 mint's and  add 1 - 2 cups  of  water and  add salt and close  the  lid  and  let  it  cook  until potatoes  soft . 
  • Finally  add  chopped  fresh  cilantro springs / coriander leaves and mix  well and  close  the  lid  and  remove  from heat .
  • Finally  yard  beans  curry  with  potato  combination  is  ready  for  roti , chepathi etc.,
  • You  can  replace  potato   with  raw  banana also .
