DONDAKAYA / TINDORA PULAO


This vegetable is called kovakka in tamil , Tindora in hindi and as DONDAKAYA in telugu , with this we make curry , fry , chutney but as different I tried pulao with this . And it came yummy as I wish ,So you also try it and let me know ....................

Method of preparation = 
  • Dondakayalu - 8
  • Oil - 5 tsp
  • Whole garam masala { cardamom,cloves,cinnamon,shahi jeera,bay leaf ,javitri} - You will get in market and as prefer less masala I used very little in that packet [ as you wish ]
  • Coriander seeds - 1/3 tsp
  • Cumin seeds - 1/3 tsp
  • Black pepper seeds - 1/3 tsp
  • Cashew nuts - 8
  • Garam masala - 1/3 tsp
  • Curd - 1 cup
  • Garlic ginger paste - 1 tsp
  • Salt as per 
  • Ghee - 3 tsp
  • Green chillies - 4 
  • Nutmeg {jaajikaya} powder - a pinch 
Method of preparation =

For preparing this dish , 
Wash and chop  dondakayalu  vertically 
  • Firstly take water in a bowl add whole masala ,coriender seeds,cumin seeds,black pepper seeds and boil them for 10 - 15 mint's ..........

  • Take a pan add 1 tsp of oil and add rice and fry the rice for few mint's ...... and transfer to a plate .....

  • Mean while , take a non- stick pan add 3 tsp of oil when hot add chopped dondakayalu and fry them and transfer to a plate 

  • When the water is boiled filter the water to another bowl and keep aside the boiled ingredients [ as they are of no use]
  • In the same bowl pour the masala water  and add fried rice and half cook the rice  in a medium and low flame .....................

  • Mean while take curd in to a bowl add nutmeg powder,garlic ginger paste,salt,and mix well .

  • In a sause pan add ghee and fry cashew nuts and chopped green chillies and keep aside .
  • When the rice is half cooked add fried dondakayalu and mix well 

  • And the curd mixture and saute well .............and close the lid for more 5 - 10 mints 

  • And remove the lid and finally add fried cashew nuts and chillies and mix well and serve hot to your guest's this verity pulov
