Ponnuganti is leafy vegetable good for eyes this is one of the traditional recipe which was learnt by my mom

- ponnuganti aaku - 2 bundles
- red chillies - 5
- moong dal - 1/2 cup
- dry coconut - grated 1/3 cup
- garlic pods - 4- 5
- salt
- oil - 4 - 5 tsp
- onion - 2 medium
- green chilli - 3
- mint leaves - 7
- turmeric - 1/3 tsp
Talimpu =
- urad dal - 1/3 tsp
- cumin seeds - 1/4 tsp
- curry leaves - 5
- mustard seeds - 1/4 tsp
Method of preparation -
Wash , remove stems and finely chop the green chiles.
Wash , pat dry and roughly chop the ponnuganti aaku .
Peel ,and wash onion and chop them .
Peel and crunch garlic pods .
Pluck and wash and dry mint leaves .
Pluck and wash and dry mint leaves .
Heat oil 1 tsp in a pan , separately fry all ingredients like red chillies,cumin seeds ,heat separately moong dal on medium flame until aromatic fry ,and keep aside to cool to room temp....
Grind all ingredients in a blender into a fine powder by adding garlic pods .
In a separate sause pan ,add oil and add all talimpu ingredients in an order when the urad dal turns into golden color add chopped onion ,green chillis ,mint leaves and fry for few mint's .
Then ,add washed and drained ponnuganti aaku/leaves and saute it for few mint's uncovered so that the smell will go .
Cover the fry for some time 9 - 10 mint's until the ponnuganti kura is cooked well .
In the middle uncover the lid and mix the fry .
Add salt and turmeric powder and mix well .
Then add moong dal powder and fry for few mint's on medium heat and remove from heat .
