MOONG DAL HALWA [ RAJASTHANI STYLE ]


It is a  traditional  Rajasthani  dish  which they prepare in the winter season  as it is heat  producing item ,so that body gets heat and healthy to eat .
As I learnt this dish from an aunt who stays in our house on rent. 

Ingredients = 
  1. Yellow moong dal { split yellow gram } - 1 cup 
  2. Milk - 1 cup {warmed}
  3. Sugar - 11/4 cup { sugar }
  4. Ghee -  7- 9 tsp 
  5. Saffron - 4 -6 twings / strands { soak in warm milk }
  6. Cardamom powder - 1/2 tsp 
  7. Badam / almonds - 8 - 10 { soak in water for few mints so that can be cut with knife easily }
  8. Pista - plain - 5 cut them into small 

Method of preparation = 

Soak the moong dal in water for 3 to 4 hrs .

Drain and grind to a coarse paste using very little water .

Melt the ghee in a flat broad non - stick pan and add the moong dal paste and stir the mixture continuously on low flame  till it becomes golden brown .

Add warm milk and one cup of warm water and mix well so that there will be no lumps and cook , stringing continuously till all the moist has  be absorbed . 

Add sugar and cook on low flame till the ghee separates .

Add the saffron milk which was soaked in warm milk , mix well and finally add cardamom powder and mix well . 

And finally transfer to a serving bowl and garnish with soaked and chopped badam and pista pieces .


suggestion - If the moong dal paste has excess water after griding , drain it out through a strainer .
