EGG GRAVEY CURRY [ FOR RICE AND ROTI ]

There are different types of egg curries this is one different type of egg gravy curry 

Ingredients : - 

green chillies - 3 - 5 [chopped ]
ginger - 1 inch [ chopped ]
garlic - 4 cloves [ chopped ]
red onions - 2 [ chopped ]
red chilli powder - 1/2 tsp
tomatoes - 2 [ chopped ]
coriander powder - 2 tsp 
cumin powder - 1 tsp 
paprika powder - 11/2 tsp [ it is made by grinding the dried pods of  red capsicum ] 
water - 1/2 cup 
garam masala - 1/3 tsp 
oil - 3 tsp 

saute oil for frying the egg - 

olive oil / refined oil - 1 tsp 
tumeric powder - 1/4 tsp 
eggs - 6 [ boiled & peeled ]
red chilli powder - 1/8 tsp 
salt to taste - 

talimpu - 
mustard seeds - 1/3 tsp
cumin seeds - 1/2 tsp
curry leaves - 10 - 12 leaves 

Method of preparation : - 
  1. Boil the eggs , peel the eggs and keep ready to make curry .
  2. Chop green chillies , ginger and garlic .
  3. Finely chop  onions .
  4. Wash  and keep aside curry leaves chopped .
  5. Heat a saute pan , add oil once heated , add all talimpu ingredients in order , once they crackle ..


  1. Add green chillies , ginger and garlic paste ,.. saute for 5 - 10 second's or until you can smell the aroma .........................
  2. Add chopped onions and saute  till transparent ......

  1. Add salt and 1/2 tsp red chilli powder and mix well ,
  2. Allow to cook for ten mints until till transparent or until caramelize / fried  on medium heat .
  3. Next add chop the tomatoes and saute well .......................

  1. In the mean time ........... check on the eggs  ,
  2. Again check the onions curry which is on the heat .... add coriander powder to the frying tomatoes combine well ,
  3. Cover and allow to cook 
  4. In the mean while we will see the egg saute fry work . Take a medium frying pan , allow this to heat for a while add tsp of oil , add 1/4 tsp turmeric powder , saute for few secod's  


  1. Add the eggs - care fully and gently . we will hear popping sounds then move the pan round and let eggs to saute .

  • Do this for 20 - 25 sec , then sprinkle salt and 1/8 tsp of red  chilli powder and fry for sec , Toss some more and make sure the egg is well fried even take more 5 sec or more . 
  • Turn off the flame and remove from heat.
  • Make slits vertically on each egg after removing from heat [ it will help to absorb gravy ]
  • Back to gravy - add paprika  / bedekaya karam little - this will color the curry not spicy 
  • Cook for another 4 mint's gently  add the eggs to the masala mixture ,  ..........
  •  and add 1/2 cup of water [ if you want more gravy add little more water and adjust chiili and salt ] mix well ..........

  • Cover and cook for more 5 mint's .
  • Add garam masala and mix well ........ and finally I added little kasoori methi 1/2 tsp and chopped cilantro springs .

  • Serve hot with roti and steamed rice .............
Note - kasoori methi means dried methi leaves it is optional .
