Misal pav is an authentic Maharashtrian snacks , Recently we visited Pune there we ate this snack and learnt how to make as it is easy to make and a tasty snack I thought that I should try this so I took the recipe.
When a curry or dry curry cooked with beans sprouts it's called Usal .as you cook with vegetables it is called bhaji . Misal in more traditional way is to cook Usal little watery to dunk the bread.
Ingredients - for four people
For Usal -
2 cups moth beans [matki]
2 tsp Maharastrian goda masala or garam masala
1 tsp chilli powder [ as required ]
1 tsp jagerry or suger [ as required ]
salt
For rassa [ another curry for misal ]
3 potatoes
2 medium sized onions
2 tsp goda masala or garam masala
2 tsp tamarind pulp
3 tsp chilli powder [ as required spice ]
salt
1/2 tsp oil
For plating -
Faran / mixture of any
Chivda [ if there ]
1 small onion finely chopped
finely chopped cilantro springs
Method =
Soak moth beans over night ,next day , drain water and leave to sprout for another 5 - 6 hrs .
Remove and wash sprouted beans ,
Heat a pan with tsp of oil add mustard seeds when start splittering add tumeric powder and asafoedia /hing and add sprouted beans [or ] mixed sprouted beans [ we will get in market .Add some water and cook
When they become soft add garam masala or goud masala ,jaggery , salt , chilli powder saute well and cook for some time 5 - 10 mint's .
While frying add ground nuts along with oil when we give talimpu at the beginning .
Usal is ready
For rassa =
In another Pan add oil 1/2 tsp addmustard seeds when splutter , add tumeric and asafotedia / hong add chopped onions when they become transparent add chopped finely potato pieces and saute for few sec's
Add 2 cups of water and cook until soft or tender .
Add maharastrian masala or garam masala ,tamarind pulp,salt, red chilli powder and jaggery and mix well cook for few sec's [ if water is less add water of 1/2 more cup ]
rassa is ready
Now plating =
In a serving cup or plate first you keep faran or mixture of any type of 11/2 ladle and pour usal of 3/4 ladle , and potato rassa 3/4 or 1/2 ladle and garnish with chopped onion or coriander on the top and serve hot / immediately with fried pav with butter or non fried pav plain .
