Ingredients -
- beerakaya / ridge gourd - 1 small
- besan - 1 cup
- cilantro springs few
- salt as per taste
- soda - bi - crab a small pinch
- ajwain / vaamu - 1/4 tsp
- rice flour - 3 tsp
- green chilli - 2
Method of perparation -
Wash and remove ends ,scrape the protuded ridges with a peller ,wash and slice into thin rounds with a knife or with mandoline .
Ground green chilli,salt,cilantro springs into a fine paste .

In a mixing bowl ,mix together rice flour,besan, grounded green chilli paste,ajwain [optional],soda - bi - crab .
whisk together all ingredients until well - combined and smooth by adding water .

Heat oil in deep frying pan on high and medium flame
When oil is hot low the flame and dip ridge gourd rounds in the mixed besan batter so that they are generously coated and gently drop coated beerakaya with your hands in oil as many pieces as ,will float in the hot oil freely .
Fry around few mint's and turn and fry until beerakaya bajji turn into golden color .

Remove beerakaya bajji with a slotted spoon on to absorbent paper .
Repeat the same with rest of the mixture .
Serve these fritters with steamed rice as side dish .
