MUSHROOM 25


This is rich and spicy curry has 25 ingredients in it and hence its name is mushroom 25 .

INGREDIENTS

Butter Mushroom - 250 grms
Onion[ chopped ] - 4
Shallots - 16
Green chillies - 6
Tomato - 3 [chopped ]
Ginger paste - 1 tsp
Garlic paste - 1 tsp
Butter - 3 tsp
Cashew nuts - 10 
Almond - 15
Plain flour [ maida ] - 1/4 cup
Turmeric powder - 11/2 tsp
Pepper powder - 1 tsp
Chilly powder - 1 tsp
Coriander powder - 2 tsp
Garam masala powder - 1 tsp
Kasoori methi - 1/2 tsp
Oil 
Coriander leaves /cilantro springs - few
Pudina leaves - 1 tsp
Lime juice - 1 tsp
Sugar - 2 pinch
Curry leaves 
Salt 
Fresh cream - 2 tsp

PREPARATION

Soak cashew nuts , almond in warm water  for 10 mints. 
Grind it to a fine paste .
Heat oil in a pan and saute 3 chopped onions,add sugar,1 pinch of salt and fry till golden brown color .Grind it to a powder/paste.
Mix well maida ,1/2 tsp pepper powder,salt,water,and marinate mushroom pieces with the mix.Fry in oil till light brown in color.
Heat butter in a pan .Add 1 chopped onion,peeled shallots and saute well...Add ginger garlic paste,green chiilies,chopped tomatoes and saute well.
Once it is done add the onoin paste and mix well to it .Add turmeric powder ,coriander powder,red chilli powder ,garam masala ,chopped cilanro springs,chopped pudina leaves,lime juice and mix well. 
Once raw smell goes, add fried mushrooms,salt,1 cup of water [ and more if necessary ]and stir well 

Cover and cook on low flame 10 mints.
Add almond;cashew paste and saute next add kasoori methi ,curry leaves and cook till gravy is dry [if u want gravey type add some water and heat it ]
Transfer it into serving bowl andgarnish it with fresh cream .

It is suitable for fried rice and roti.
