VEGETABLE ROLL

vegetable  roll  is  the item which  all age groups of people like preparation is easy and eating also easy with all verities of vegetables that now a days children won't  eat  ,easy to carry while travelling 

Ingredients for  preparing veg rolls - for 4 rolls 

For Roties -

  • maida /all purpose flour - 2 cups
  • salt - 1/4 tsp 
  • oil - 1/2 tsp
  • boiled potato - 1 [smashed]
For Filling - 
  • boiled and smashed potato - 3 
  • tomato - 1 
  • onion - 11/2
  • green chillies - 2 
  • garlic ginger paste - 1/4 tsp 
  • cilantro few springs
  • pudina / mint  leaves 8
  • salt as per taste
  • red chilli powder - 1/2 tsp
  • coriander powder - 1/4 tsp 
  • oil - 2 tsp 
Talimpu - 
  • curry leaves 5 
  • mustard seeds  1/4 tsp
  • cumin seeds 1/4 tsp
  • urad dal  - 1/4 tsp
Method of preparation -  
  • Remove stems,wash and finely chop green chillies
  • Wash and tear curry leaves into small pieces
  • Peel and finely chop the onion into small pieces
  • wash and finely chop cilantro springs 
  • Wash and finely chop tomatoes 
  • Wash and boil potatoes ,and peel them and smash into fine paste
  • Wash and finely chop mint leaves 
  • In a mixing bowl ,knead all purpose flour,salt,boiled and smashed potato and oil into soft dough with cold water [like parata dough]
  • Heat tsp of oil in a vessel , add all thalimpu ingredients in order when urad dal turnd golden colour add  chopped onions and fry them for few secs,
  • And add garlic ginger paste and saute for few secs when raw smell goes add chopped green chillies and fry for a sec 
  • Add chopped tomatoes and cook for medium flame until  tomatoes turn soft 
  • Add  mint leaves,cilantro springs  and fry for few secs ,add coriander powder,salt,red chilli powder and mix well 
  • Finally add smashed potato and mix thoroughly and remove from heat


  • To prepare roties,pinch a large lemon sized ball of dough,dust the surface with some atta and roll out the stuffed dough to form 8 '' - 9 '' diameter circles   
  • Heat  tawa on a high and medium flame ,place rolled out parata/roti  on the pan ,cook lightly on both sides.Prepare all roties {if u are doing more  keep them closed [roti cloth/case]so that they will be  soft }
  • Keep the roti  on a flat plate ,place 3 - 4 tsp of vegitable filling in the middle of roti  and close sides first as shown 
  • And then the upper part 
  • And then the down part tightly to make perfect roll and  is ready to serve 


Suggestions -
 To serve or for packing we can wrap in a butter paper or tissue paper 
don't prepare roties thick ,thin roties are preferable for rolls 

Variations - 
You can use instead of potato mushrooms ,or with potatos combination of baby corns 
while rolling you can add cheese grated ,and in same way with panner also .
