PANI PURI [ SNACK ]

Pani  puri is  very  famous  snack  or  time pass  food  for all  , with out age bar , my family  members  love  my  pani puri  which  I learnt  from  one  of  my  friend  at  my native .There  are  so  many  types  of  recipes with  this  pani puri  also each one  has their  own  recipe , and  so many won't  prepare  at  home also . But  home  made  is  home  made  right . My son  likes  snacks items very much as on week end means they will  be  at  home  , so  preparation  of  snacks so  this week end  I planed  of  pani puri  , which  I prefer  to  prepare  with  fresh peas as it is the season  now  so  I chose  this  recipe , and  I prepare  in  an  easy way .

Ingredients for  preparing  pani - 

  • Pani -   1 litre mineral water 
  • Pani puri masala - 3 tsp
  • Black  salt  - 2 tsp
  • Salt - as per 
  • Sugar - 2 tsp 
  • Cilantro / coriander  leaves - 1/4 cup
  • Ginger - 1/2 inch
  • Mint leaves - 1/2 cup
  • Green  chillies - 4 
  • Tamarind  juice - 4 tsp
Method  of  preparation  of   pani -
  •  Ground green chillies , mint leaves , ginger , cilantro { wash them thoroughly before grounding } by adding       regular salt  ,
  • Take  the  mixture  in  musiln  cloth by adding pani puri masala , black salt and sugar and mix well   and  tie  like  a  potli  and  drop  it  in  one  litre  of  water  where we keep  it  rest   and leave  it   for  at lest  2 hr  , so that  the spice  will  mix  with  water  from  potli bag  . You can   refrigerate it  for these hrs    ...............................
  • Now  the  taste  of  pani  , and  add extra  water  accordingly  to it  as per  your  taste ,add  sugar,  salt , black  salt  accordingly . This  would not  be  spicy  in  first  sip  but  increases  gradually  as  you  keep  on  eating .{ add water  if  pani  is extremely  spicy }

Ingredients   for  making  green peas  and  potato stuffing - 
  • Fresh  green peas - 2 cups 
  • Potato - 2 
  •  Onion - 1 
  • Salt 
  • Red chilli powder - 1/2 tsp
Method - 

Arrange  the  green peas  in bowl by adding glass of water and pinch  of salt and close  the lid  and place  washed  potatoes by cutting like inch size  for  4 -3 whistles , when the pressure  drops  remove  the  skin  of  potatoes and mash  them and coarsely mash green peas also .

In  a  pan  add drop  of  oil  and add  finely  chopped  onion  and  saute  for  a sec , and  add  coarsely mashed  potato and  green peas  mixture  and  add  salt  and  red  chilli powder  and  mix  well .

The  mixture  should  be  slightly thinner   as  it  gets  thickened  over  by  that  time .

It  is  important  to keep  the  mixture warm  then only it will taste super .


Chop  onion finely  and grate carrot also  and mix well  for  using  for palting .

Plating of pani puri - 
  • Take  each  poori  poke it  gently and  stuff  with 1/2 tsp  of peas and potato mixture and 1/2 of carrot and onion mixture , and  add little green chutney and sweet chutney and pour one laddle  of pani and and  just gobble it ............................
  • How is the  taste super right ; ) , I know it ............... enjoy  your feast friends .

Note - It  is  not  compulsory  that  green chutney or  sweet chutney it is up to your taste.

SUKA                                                                                                  

Suka  it  is  very  special  item  when  we eat  pani puri  it is  usually  given like a dessert  to steal the show .It doesn't involve using of pani  which is the most            important one of all the ingredients used in  pani puri .It is special  from calcutta  which is famous  for  it's  pani puri world wide .It as not as tough to make as it     sounds,and doesn't require any expertise.                                                                 


INGREDIENTS REQUIRED TO MAKE THIS DELICIOUS AND MOUTH WATERING DISH ARE-

A PINCH OF BLACK SALT                                                                                                     
A PINCH OF SALT                                                                                                                   
A PINCH OF RED CHILLI POWDER                                                                                      
THE GREEN PEAS AND POTATO STUFFING (WE PREPARED FOR PANI PURI)           
LEMON JUICE                                                                                                                         
A LITTLE OF THE GREEN CHUTNEY{OPTIONAL}                                                           
LEMON ZEST{OPTIONAL}                                                                                                   

METHOD OF PREPARATION-                                            

TAKE AN EMPTY PURI AND FILL IT WITH THE GEEN PEAS POTATO STUFFING          
ADD ALL THE ABOVE INGREDIENTS TO IT AND THAT'S ALL YOUR SUKA IS READY 
EAT IT AND ENJOY...........
