This pachadi is pure vegetarian and a side dish for Steamed rice ,fresh ,healthy and light .Ridge gourd is a vegetable that is vata paciying according to ayurveda and one of my favorites . It is called beerakaya in Telugu we can prepare so many recipes this is one of my favorite one learnt from my sister in law so I want to share with you
Ingredients -
- Beerakaya - 1
- Green chillies - 4
- Cumin seeds - 1/3 tsp
- Tamarind - 1 inch
- Garlic pods - 10
- Salt as per
- Cilantro springs few
- Oil - 1 1/2 tsp
Method of preparation -
- Peel and wash and chop ridge gourd into small pieces .
- Remove the stems and wash the green chillies ,
- Peel and keep aside garlic pods.
- In a pan add oil 1/2 tsp and fry green chillis and cumin seeds and transfer to a plate and
- in the same pan heat oil and when hot add the chopped ridge gourd and stir fry for 4- 5 mint's on medium flame and fry for 10 mint's on low flame .
- When cooled , first add fried green chillies , cumin seeds , salt , garlic pods ,tamarind and ground into paste ............
- Next add fried and cooled ridge gourd and ground coarsely by adding finally cilantro springs and transfer to a serving bowl .
- This pachhadi can be served with hot steamed rice and drop of ghee and roti as side dish with curry .
