RIDGE GOURD PACHHADI - FOR RICE


This pachadi is pure vegetarian and a side dish for Steamed rice ,fresh ,healthy and light .Ridge gourd is a vegetable that is vata paciying according to ayurveda and one of my favorites . It is called beerakaya in Telugu we can prepare so many recipes this is one of my favorite one learnt from my sister in law so I want to share with you 

Ingredients - 
  • Beerakaya - 1 
  • Green chillies - 4 
  • Cumin seeds - 1/3 tsp
  • Tamarind - 1 inch 
  • Garlic pods - 10 
  • Salt as per
  • Cilantro springs  few
  • Oil - 1 1/2 tsp
Method of preparation - 
  • Peel and wash and chop ridge gourd into small pieces .
  • Remove the stems and wash the green chillies ,
  • Peel and keep aside garlic pods.
  • In a pan add oil 1/2 tsp and fry green chillis and cumin seeds and transfer to a plate and 
  • in the same  pan heat oil and when hot add  the chopped ridge gourd and stir fry for 4- 5 mint's on medium flame and fry for 10 mint's on low flame .
  • When cooled , first add fried green chillies , cumin seeds , salt , garlic pods ,tamarind and ground into paste ............

  • Next add fried and cooled ridge gourd and ground coarsely by adding finally cilantro springs and transfer to a serving bowl .

  • This pachhadi can be served with hot steamed rice and drop of ghee and roti as side dish with curry .
