DRY NUTS MUSHROOM CURRY [ FOR ROTIS]


This is a rich and spicy curry which contains 25 items and  is rich in taste with dry nuts and rich masala ,so its name dry nuts mushroom curry 

Ingredients -

  • Button mushrooms -200 grms
  • Onion - 5
  • Shallots - 10 
  • Green chillies - 4- 5
  • Tomato - 2
  • Garlic paste - 1/8 tsp 
  • Ginger paste - 1/8 tsp 
  • Butter - 2 tsp 
  • Cashew nuts - 10 
  • Almond - 14
  • Plain flour [maida] - 1/4 cup
  • Turmeric powder - 1 tsp
  • pepper powder - 1 tsp
  • Red chilly powder - 1 tsp
  • Coriender powder - 1/8 tsp 
  • Garam masala - 1/8 tsp 
  • Kasoori methi - 1/2 tsp
  • Oil - for deep frying 
  • cilantro springs few
  • Mint leaves few
  • Lime juice few drops
  • Salt to taste 
  • Sugar pinch
  • Curry leaves 10 
  • Fresh cream to garnish 

Preparation = 
  • Wash and finely chop cilantro springs 
  • Wash and finely chop cilantro springs 
  • Remove stems and wash ,cut in the middle 
  • Wash and finely chop onions - 3 ,round shaped - 2 
  • Wash and chop tomatoes 
  • Wash and chop mushrooms into halves 

 Soak cashew nuts and almonds in warm water for 10 mints ,and ground it into a fine paste .

Heat oil in a pan and saute 3 chopped onions,pinch of salt and sugar and fry till turns to  golden brown. Ground it to a fine paste.

In a mixing bowl add maida,pepper powder,salt and marinate mushroom pieces for 3 sec's.Fry in oil till light brown colour .  

Heat butter in a pan.Add one chopped [round shaped]onion,peeled and sliced shallots[not there use spring onions] and saute well....[into golden brown]Add ginger paste and garlic paste and fry for a sec and add green chillies ,and fry for sec and then add tomatoes and saute well[cook all in medium heat]

Once it is done add the grounded onion mix to curry ,and mix thoroughly 
add tumeric powder,coriander powder,red chilli powder,garam masala powder,chopped coriander leaves,chopped pudina/mint leaves,lime juice and saute well for 5 mints 

Once raw smell goes ,add fried mushrooms,salt as per taste and 1 cup of water [if necessary add more]
and mix well [the curry  should not too thick so check and add water]

Cover and cook on low flame for 9 - 10 mints.
[stir the curry in the middle removing the cover]

Add almond and cashew paste and mix well and then finally add kasoori methi,curry leaves and cook till gravy comes little closer [dry]

Transfer it to a serving bowl and keep fresh cream on the top as final touch .

And the delicious dry nuts mushroom curry is ready to eat with roties and fried rice etc.,
