KAKARAKAYA [BITTER GOURD] NINCHUDU KAYA KURA - FOR RICE

Gutti kakarakaya - It is a simple dish and one of my favorite dish once ate in my granny's house and became fan .............entering to recipe - the roasting process intensifies the flavour of the stuffing .The bitterness of kakarakaya is balanced with the spiced ,tangy - sweet stuffing comprising of  garlic jaggery and tamarind and red chillies .

Ingredients - 
  • coriander seeds - 2 tsp
  • cumin seeds - 1 tsp
  • red chillies - 8 - 10
  • salt as per 
  • jaggery - 2 tsp
  • urad dal - 3 tsp
  • chana dal - 2 tsp
  • garlic - 5 pods 
  • tamarind - 1/2 lemon size or accordingly 
  • kakarakayalu - 3 

Method of preparation - 
  1. In a vessel ,add water 2 glasses ,4 tsp of buttermilk , pinch of salt and 1/4 tsp turmeric powder and partially slit 1 inch cut bitter gourd [or if available use small kakarakayalu ] and cook on heat for 10 mint's and remove from heat and drain water and squeeze extra water . [ This process helps to remove bitter ness from kakarakaya and enhance different taste] 



  1. In the mean time in a frying pan add tsp of oil  and fry coriander seeds ,cumin seeds and red chillies and ground into a fine powder by adding jaggery[if interested]  and salt 
  2. Also fry urad dal and chana dal and ground into a fine powder by adding galic and turmeric [ if not interested leave it ]

  1. Mix well the two powders by grinding together and stuff the bitter gourds with the  mixture prepared . 
  2. Add 3 tsp of oil into shallow pan when hot add stuffed kakarakaya ,cook on medium and high  flame by stirring for 3- 4 mint's and then low the flame and cover the kakarakaya with a lid and let them cook for 10 mint's .Keep checking in middle and add left over stuff  to the curry and saute well and close the lid for still more 5 mint's [ add more oil if you like ] [ with less oil means please check and stir fry as it to ensure they don't burn or don't stick to the pan .

3.Remove from heat as cooked and  serve with rice hot .
