DUM BIRYANI {VEGETABLE}

Dum  biryani  is  one  of   main  my favourite food  item , and  I got  this  recipe from  my  aunt yesterday , and  from that  time my mouth  was  watering to prepare this item , and I did it for my lunch the next day   So we  go  to  the recipe  right  now .

Ingredients for  making veg layer  - 

  • Potato - 1 {peel and wash chop into small pieces}
  • Carrot  - 2 {peel and chop into pieces}
  • Green peas - 1 cup {wash  and  place them side}
  • Onion - 2 {chop into vertical slices}
  • Tomato - 1 {wash and chop into pieces}
  • Cauliflower - 1/2 cup {cut them and  keep it in warm water}
  • Beans - 9 {cut  the  ends and  cut  into 1/2 inch slices}
  • Ghee - 2 tsp
For rice layer - 
  • Basmati rice - 1 glass
  • Clove - 2
  • Cardamom - 1 
  • Salt - 1/4 tsp
  • Garlic pods - 6
  • Cinnamon - 1/2 inch
  • Wailong - small - 1/4 inch 
  • Oil / ghee  - 2 tsp
  • Raisins - 6
Ingredients for Biryani masala - 
  • Cashewnuts - 4
  • Badham - 4 
  • Fresh coconut - 1/2 cup
  • Poppy seeds - 2 tsp
  • Red chilli powder - 1 tsp
  • Salt - 1/4 tsp
  • Garlic pods - 8
  • Ginger - 1/4 inch
How  to  make  biryani - 
  • First of all I grounded  all  ingredients of  masala  into  a fine  paste .

  • Mean while  in  pan  add  ghee and  add  chopped  onions and 

  • when  golden  color  add  chopped  tomatoes  and  fry  for  5 mints on  medium  heat , and  then  add prepared  or  grounded  masala  and  on medium  and  low  heat  fry this until  it leaves good aroma  , and  remove  from  flame and keep  aside .

  • In  a  pressure  cooker  add  oil 3 tsp and  ghee 4 tsp  and  when  hot  add  Clove ,Cordamom ,Garlic pods , Cinnamon ,Wailong  and  fry  for  a  minute and add  all chopped  vegetables  like  carrot , beans, green peas , capsicum etc.,  and then  rice  and  fry  it for 5 mint's and Raisins and  any dry nuts  if  you want and  and  add water  and  salt and mix well {This all should  be done  low  flame}

  • Now  add the  prepared  masala  on  the  top  and  and close  the  lid and  cook  for  1 visil  on high flame  and  on  low  flame cook  for  5  mint's  and  remove  cooker  from  heat  .
  and  and close  the  lid  by  setting  like  this 


 and  cook  for  1 visil  on high flame  and  on  low  flame cook  for  5  mint's  and  remove  cooker  from  heat  When   the  pressure  is  released  remove  the  lid  and  serve  the  it  hot  
  • If you  want  you  can  make  raita  for  it  as  we discussed  in previous  recipe {samya pulov}
